The Good Morning Clewiston is a cocktail created by RumJava, featuring RumJava Signature, a coffee infused rum. This rum is infused with freshly roasted Java’Mon Coffee for a gorgeous deep flavour with subtle notes of vanilla, caramel, coconut and cinnamon which blends perfectly with the Good Morning Clewiston. This cocktail tastes smooth and creamy with a punch of banana, it’s definitely a great way to welcome the morning!
The cocktail itself has a difficulty rating of 4/10, however the caramalised sugar garnish with a hanging basket of flowers results in a difficulty of 9/10. You will definitely need a lot of time on your hands!
We served this cocktail in a coupe glass and created a hanging basket of flowers suspended entirely by a spiral tower of caramalised sugar. This was challenging, however, it makes for a visually striking cocktail.

Ingredients
Drink
- 40 ml RumJava Signature
- 20 ml Banana Liqueur
- 10 ml Maple Syrup
- 25 ml Lemon Juice
- 25 ml Egg White
Garnish
- 1 cup Sugar
- Black Thread
- A varitey of flowers
Instructions
Cocktail
- Its a good idea to have the cocktail prepared before hand, therefore add all the ingredients, along with ice, into the cocktail shaker.
- Shake for 10-15 seconds.
- Fine strain into a container to place in the fridge until needed.
- Once the garnish is made, simply pour the cocktail into the glass and enjoy your drink.
Garnish
- Add the cup of sugar into a saucepan on a medium heat. This will start to turn a golden brown.
- Once a golden brown throughout, remove from the heat and stir continuously to cool.
- The caramalised sugar is ready to be used once it falls off the wooden spoon in a ribbon.
- Place the coupe glass upside down into the caramalised sugar and slowly pull the glass vertical whilst twisting. Don't worry if this takes a few attempts.
- To make the hanging basket, over a small dome shaped object in non-stick baking paper and carefully drizzle the caramalised sugar over it.
- Once cooled, you can thread two threads through the basket and tie a knot to secure them, ensuring it can balance well.
- Carefully place flowers in the basket and hang it from the caramalised sugar tower.
