Today we bring you the gorgeous Clover Club featuring Gentleman’ Gin. The sweet and tart taste from the raspberry syrup and lemon are perfect with the taste of the gin botanicals. We used Gentleman’s Gin to add a depth of mature, almost pepper, flavour to underpin the more obvious flavours of the cocktail. Gentleman’s Gin has won gold in both the World Gin Awards 2020 and the Frankfurt International Trophy 2020, so it’s really special. The egg white add a velvety smoothness to each sip you take. 

The difficulty of the Clover Club is 4/10. The process involves an initial shake of the egg white to get the beautiful foam, followed by a shake with all other ingredients.

We served this striking cocktail in a coupe glass and you can really see the contrast of the white egg foam and the pink liquid. Equipment

  • Cocktail Shaker
  • Jigger
  • Fine Strainer
  • Hawthorne Strainer
  • Glassware: Coupe

Ingredients

Drink

  • 50 ml Gentleman's Gin
  • 10 ml Lemon Juice
  • 5 ml Raspberry Syrup
  • 10 ml Sweet Vermouth
  • A Handfull of Raspberries
  • 1 Egg White

Garnish

  • 3 Raspberries
  • A Cocktail Pick

Instructions 

  • Add all of the ingredients into a cocktail shaker and dry shake (without ice) until the eggs are emulsified and the raspberries are pulverised.
  • Add ice to the cocktail shaker.
  • Shake again for 10-15 seconds.
  • Strain into a coupe glass.
  • Garnish with three raspberries on a cocktail pick.
