Today we bring you the Bee’s Knees! Can you tell we don’t want summer to end? Usually a very sweet and tart cocktail, we decided to shake it up a bit by using Gentleman’s Gin. This gin brings a mature, peppery and pine flavour profile, which has led it to win gold in both the World Gin Awards 2020 and the Frankfurt International Trophy 2020. It perfectly balances out the sweetness from the honey and leaves a very natural tasting cocktail.
The Bee’s Knees has a difficulty rating of 3/10. Usually, adding honey into a cocktail with ice causes the honey to harden, making it difficult to fully incorporate it. However, mixing the honey with the ingredients prior to adding ice negates this issue.
This cocktail is a delightful and fresh yellow drink, served in a coupe glass. We garnished it using a dehydrated lemon from our favourite dehydrated fruit company, The Zest Co.

- Cocktail Shaker

Ingredients
Drink
- 2 oz Gentleman's Gin
- 3/4 oz Fresh Lemon Juice
- 2 barspoons of Honey
Garnish
- 1 Dehydrated Lemon Slice (we got ours from The Zest Co.)
- 1 Red Geranium Flower (please ensure floral garnishes are non-toxic)
Instructions
- Mix your gin, fresh lemon juice and honey in a cocktail shaker prior to adding ice. This ensures the honey is fully incorporated within the liquids.
- Add ice into the cocktail shaker.
- Shake for 10-15 seconds.
- Fine strain into the coupe glass and garnish with a dehydrated lemon slice and a red geranium flower.
- Enjoy your drink.
